Peach Crisps




In my opinion, there is nothing quite like a warm fruity, syrupy, crunchy dessert on a cool summer night. One of my favorite standbys is a peach crisp. Top with some ice cream or whipped cream, peach crisps are simple to make and a crowd pleaser every time.

Filling Ingredients

4 large, ripe peaches cut into bite size pieces
1/2 cup brown sugar
2 tablespoons all purpose flour
1 tsp vanilla extract
pinch of salt

Preheat oven to 350 degrees. Combine filling ingredients in a large bowl. Mix until brown syrup is coating the peaches. 





Fill 4 small ramekins with filling and set aside on a baking sheet.


Crisp Topping

1 cup all purpose flour
3/4 cup brown sugar
1 stick of butter (cold and cut into small chunks)
3/4 cup whole blanched almonds
1 tsp nutmeg
2 tsp cinnamon
2 tbs water

Add all ingredients into a food processor. Pulse until the chunks of butter are well incorporated and topping is a play-dough like consistency.





Spoon chunks of topping onto peach filling until all the topping has been used and the peach filling is mostly covered. 





Place baking sheet with ramekins into the oven. Bake for 20-25 minutes until crisp topping is golden brown and bubbling.



Once the crisps have finished baking and are out of the over, allow to cool (if you can handle the wait) for about 10-15 minutes. Top with the ice cream of your choice and dig in!
